Maeghan, you had me at the chocolate!

I had to stop and look at this because I love chocolate. I am definitely going to try these muffins because they look extremely yummy.

I have had my share of cooking mistakes. Some have been salvageable and some have had to be trashed.

One thing that I learned from those mistakes though is that it is ok to experiment and try new things. Every once in a while you end up with a gem and the recipe turns out better than ever before.

For those other times, well, that’s when a trash compactor comes in handy…or a dog!

Unfortunately there is no ham bone sitting in my freezer but this recipe is making me wish for one. I might have to start calling around to friends and family to see if they have one.

Ham bones make me think of split pea soup. That is how my grandmother always used it. I like this recipe much better.

I do wonder though how it would taste with some other vegetables in there. I might have to do some experimenting here.

Right now though I’m thinking I might need to have a ham dinner this weekend, just so that I can get my hands on a ham bone.

This is what will be for dinner tonight!

What a great recipe, and it uses ingredients that I already have on hand.

I think a great side would be to make a whole grain rice and then use the leftover marinade/glaze on top of it. That with some steamed vegetables will make the perfect meal.

Chicken can sometimes become boring and monotonous. This recipe looks like a great way to kick it up a notch. There is nothing boring about this dish.

Now I just need to find a quick and easy dessert to end the meal with. Any suggestions?

I’m so glad you shared this! My daughter turns 2 in 2 1/2 weeks, and I came across this cake for her puppy party. This is perfect! I have never worked with fondant before, but I cannot tell you how unbelievably excited I am to make thsi cake!

Hi! For this cake we made three batches. The layer that covered the cake stand took almost one whole batch. The next batch was to cover the puppy and then the third batch, which did have leftovers, were for all of the different colors ie: spots, tongue, collar etc. Good luck and post pictures on my FB wall when you finish!

Most places sell the Jalapeno Cheddar & Onion Dips. That is why I chose that one. Without the dip, you are really left with a blank slate with just the chicken.

I do know that their recipe is very simple. They do use the heavy mayo for it that you would buy from a restaurant supply. I will have to find where I put the recipe that was given to me by the at the time head chef there. I never made it because it was given to me as the way they make it, VERY LARGE QUANTITIES! I never broke it down in a size I could make. I will have to look it up or see if I can get back up with that chef. I also have the hot sauce as well. Both are very good there.

I make a similar version of this except it is with elbow macaroni and no salsa (my husband does not like onions AT ALL) or taco sauce. He said it is like Hamburger Helper, but better because it’s homemade (and ya know my kids will eat it). heh

When I make my taco bake (layers of tortillas, seasoned meat, and cheese) I add queso to the meat to give it more of a sauciness and make it more of a filling. Although it isn’t exactly like cream cheese it is a cheese that could be substituted.

Hmm, are you using large eggs? Perhaps try X-large eggs and see if that holds the mixture better? I think adding a 3rd egg would would change the taste and texture too much. Hope that helps. These are great for on the go snacks so hopefully they will work out for you!

Love the flavor – have made them twice – but they don’t hold together very well. I press them firmly into my sprayed muffin tin but when I go to take them out they fall apart. The gang loves them but I’m afraid they would be a messy appetizer for a big get together. Any suggestions?

I honestly don’t know as I haven’t tried frying brussels sprouts and am not familiar with the moisture content for frying. You could try doing a tempura fry, using club soda, to get a nice puff and crisp right away? Hope you enjoy these though!

I had “crispy brussel sprouts” for the first time at an up-and-coming restaurant here in Richmond VA. It was lightly battered and they were cut in half instead of quartered. (I suppose this is a decision one makes depending on the size of the sprouts.) We in my regular dinner-out group (there are 6 of us right now) shared the appetizer and we all loved it. So I tried fixing them at home the same way as the restaurant but my batter did not crisp up. In my attempt to make the batter crispy(ier), I double-fried them but the result was “overcooked” sprout that was mushy but the unintended good consequence was sprouts without the usual “brussel-sprouty” smell which turns off most folks.

Do you happen to have a tip for how to make a crispy batter the first time so that I do not have to double-fry them? I will still try your oven roasted sprouts tonight and perhaps alternately use your recipe instead of the battered version.

I am actually from Nanaimo and grew up on these. Have lived abroad for almost 20 years and still eat them every time I go home. Use Bird’s Custard if you can find it, and with the center part being quite sweet, dark chocolate does not come off as being bitter. If you use semi-sweet it may be cloying. Try doing half semi, half bitter to compare.

I followed the recipe almost exactly (I used a little bit less than 2 1/2 cups of flour instead of the full 3 cups) and the muffins came out beautifully. My strawberry-loving little sister can’t keep her hands off of them!

I’m not sure, although I’ve wondered the same thing. They just don’t seem to last long enough to freeze! I did some searching online and it says quinoa freezes well and the rest of the ingredients would as well. So, maybe give it a trial run?

I have been using your pasta for a long time and just today told many about it and have received replies. I am borderline diabetic and use your pasta for my salads and marinara sauces and I love to put ground beef and Italian sausages in my sauce with extra fennel. My favorite lasagne recipe is a spinach with white sauce and the lasagne noodles haven’t been available here so I haven’t been making it.

It is so fun to see what kids come up with! Those muffins are beautiful. I love that they have frozen/fresh cranberries and not the dried which you usually see. I bet they are delicious! I’ll have to try and translate them to gluten free

My favorite lasagna is called “the best lasagna recipe” and it’s on allrecipes. So good, lots of meat and cheese. I add chopped spinach for a nod to health, too.

That’s the way I eat lasagna, I’m from Argentina and the first time I ate a lasagna here in USA with only meat it surprised me
I also put ham before the ricotta layer.

It starts off as a gooey mess, but eventually it works into a nice treat. Muddy Buddy’s are like that. The butter/Nutella/chocolate shouldn’t have been doughy, it should just simply be melted like a ganache. If you had over cooked the chocolate it would have hardened and under cooked it simply wouldn’t have melted so I am not sure what happened honestly

Hi. I just tried to make this and it didnt work at all for me. the chocolate/nutella/butter mixture came out doughy, and it was impossible to mix through. Do you have any idea what I did wrong? I mesured everything correctly, but it didnt work at all. I had to end up scrapping it.

Turned out better than expected but took awhile to get into the oven. . Made a double recipe tonight. Wanted leftovers. Still fed six people with three of us set for lunch tomorrow. Served with Mexican rice on the side and margaritas. Added black beans, onion, and corn to meat like others had suggested. Next time I’ll also add diced green chilies. Great!

Found the link to your website on Pioneer Woman’s Tasty Kitchen website. Let me just say I LOVE PEI mussels!! I was introduced to these tasty little things about 12 years ago when my Canadian husband took me to visit his family’s “Cottage” on PEI. After I got over the shock of a cottage being what I grew up knowing as a fish camp (albeit this one was on the ocean instead of a lake!) and the fact that June weather in PEI was NOTHING like what I had left in Texas, we loaded up and went to a Lobster Supper. I was sold – just with the stipulation that we only visit the end of July/first of August when it’s much warmer for my thin southern blood!

My family isn’t much for bittersweet chocolate either, so when a recipe calls for melted bittersweet chocolate, I use a combination of 2/3 milk chocolate and 1/3 bittersweet chocolate. The combination works fine and gives the milk chocolate a little more depth.

These are amazing! I HAVE to make these now, you know that, right? I am putting these down for Chinese New Year. Thanks for the inspiration and the recipe.

I make take-out style recipes at home because of allergies, too. Most things are much easier than you would think and I always make a little extra to put in the freezer for the days we would have wanted take out because I didn’t want to cook. Win!

I use half butter/half oil. Then add wine & fresh lemon juice & thyme. add mussels. while these are cooking I heat up a small loaf of bread in the oven (wrapped in dampened newspaper). Then serve mussels with bread – dipping bread into the reserved mussel/wine/butter sauce. Easy, elegant & delicious

Honestly, all of these sound awesome. My favorite way to enjoy tortilla chips is with salsa and guacamole, but I definitely need to try these out. With DH being gluten-free, we’re always on the lookout for additional snacks to keep around the house.

Chips and salsa – absolute favorite! There’s a family-owned Mexican restaurant here that makes the best spicy hot sauce. They WILL NOT give the recipe out! I could eat it everyday! It’s always wonderful to find a HEALTHY chip to enjoy with the salsa! My family likes to add them to sloppy joes or cheese quesadillas as well, just to have that extra crunch and flavor!

Found this via the What’s Cooking board on the Nest. I made this last night and it was wonderful! I’ve never tried to make stuffed shells before, because I generally avoid anything that seems fussy, but this entry made it sound so easy, and it was. I will definitely be making these again (and again and again…)

We have a similar recipe that we have loved, but I’ve stopped making it because it calls for cream of mushroom soup and other ingredients that I just don’t feel comfortable feeding to my family anymore. Thank you for sharing this more natural alternative. Looking forward to making it!

Since you’re cooking the pumpkin puree anyway, you can simply add it to the pan first and cook off the water, stirring constantly, then add your other ingredients. Cooking the water off is what Cooks Illustrated does to concentrate the flavor for their pumpkin pie recipe. It would save a step.

I have made jellies many times I have found that if you use “icing fruits” for flavoring, there is no need for artificial food colorings at all. The icing fruits are a concentrated fruit puree sold at most candy supply stores and come in quite a few flavors. You only need to use a small amount and it also colors the jellies, so no need for food color.
