Dijon Potato Salad

Ingredients

  • 1 1/2 lb red new potatoes, scrubbed and halved (quartered if large)
  • 1 Tbsp white-wine vinegar
  • 1 Tbsp Dijon mustard
  • coarse salt and ground pepper
  • 2 Tbsp olive oil
  • 1/2 cup fresh parsley, chopped
