A week before the Baptism I had my mother over for lunch. On the way over she stopped and picked up a few veggies for a salad. Stuffed Mini Sweet Bell Peppers

Ingredients:

14-16 Bailey’s Sweet Mini-Peppers, halved
1 pkg (8 oz) cream cheese, softened
1 cup (4 oz) shredded sharp cheddar
1 cup (4 oz) shredded Monterrey jack cheese
6 oz hot pork sausage, browned and crumbled
1/4 tsp salt
1/4 tsp chili powder

I was looking for something light and refreshing as an alternative to cake and when I saw this I knew it would be perfect. The hint of lemon really makes this cheesecake refreshing and palate cleansing. It almost fools you into thinking you aren’t eating a heavy cheesecake! I decided that I would make one large cheese ball just for presentation sake. I also added more lemon juice because I wanted to be able to smell a bit of lemon as you brought the fruit to your mouth. It’s a girl! Our little girl decided to surprise us and hop into our lives on Easter Day. After my last post I fell ill one night and was diagnosed with pre-eclampsia. I was induced on Saturday and delivered Caroline Grace Sunday afternoon 6lbs 15oz 19.25 in 3:47pm .She was born five weeks early but one could never tell, she was ready to enter this world and is as healthy as can be! Besides being our little bunny she was also born on Opening Day for the Red Sox where Neil Diamond sang “Sweet Caroline” live. We unfortunately missed it since we caught an hour of shut eye but our friends and family definitely loved it! She definitely made quite the entrance into our lives and into the world.
